Serves 10 people

To make the Citrus Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

To make the Premix (makes 850ml, serving 10)

400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Whole cranberries, to garnish
Mandarin essential oil, to finish

Method

To prepare the Syrup: Put every components in a saucepan, heat until it reaches a light boil, stirring to dissolve. Then, remove from the burner allowing it to reach room temperature fully. Decant to a clean bottle, cap it and store in the refrigerator, it can be stored for up to four weeks.

For the Batch Mix: Pour every spirits and syrup into one sizeable container, let it rest for an hour, then pass it through preferably using muslin, making it completely strained.

When ready to serve: Pour 85ml of your batch mix into a cocktail shaker containing ice, gently stirring gently for about 60 seconds to cool it down. Filter to a chilled martini glass or a similar vessel, top with some cranberries and finish using a brief mist of the essential oil above the glass.
